- 4 cups cherry or grape tomatoes
- 2 tbs Olive Oil
- Salt
- 1/2 tsp sugar
- 2 garlic cloves
- 1/2 - 1 Kung Pao Chili Pepper
- Oregano (1 tbs fresh or pinch dried)
Directions:
- Heat the oven to 400 degrees
- Put the tomatoes, 1 tbs olive oil, pinch of salt, and sugar into a bowl. Toss to coat the tomatoes.
- Line a rimmed baking sheet with aluminum foil and pour the tomatoes onto the lined baking sheet. Place in the over for 30+ minutes or until the tomatoes collapse.
- Remove the tomatoes from the oven and let cool for 10 minutes..
- Pour the tomatoes and their juices into a food processor - pulse the mixture until smooth
- In a sauce pan, sauté 1 tbs olive oil with the garlic and chili pepper for 2 to 3 minutes.
- Add the tomatoes along with the oregano to the sauce pan and cook for 3-5 minutes until heated.
