Pumpkin Muffins

Ingredients:

  • 2 cups of rolled oats
  • 1 cup pumpkin puree
  • 6 ounces plain Greek yogurt
  • 1/2 cup maple syrup (less 1 or 2 tbsp for altitude)
  • 2 eggs
  • 1 teaspoon baking soda
  • pinch of cinnamon 
  • pinch of salt
  • chocolate chips
Instructions:
  1. Preheat oven to 375 degrees
  2. In a food processor or blender, pulse the oats for about 10 seconds to get them mostly smooth
  3. Add all the ingredients (sans chocolate chips) and pulse until mixed
  4. Stir in the chocolate chips
  5. Transfer to a greased muffin tin
  6. Bake for ~15-minutes
