Ingredients
1.5 lb green beans, trimmed
1/4 c olive oil
1/2 c pecans or pecan pieces, toasted
2 tsp honey
1 tsp Dijon mustard
2 tbsp. red wine vinegar (optional)
Salt & pepper, to taste
Directions
- Steam the green beans until tender (6-8 min, or 2-3 min if boiled). Let cool.
- Whisk together olive oil, honey, and mustard in large bowl. Season with salt & pepper.
- Toss beans with honey-mustard dressing and the toasted pecans.
- Refrigerate up to 8 hours; just before serving, toss with red wine vinegar.
