Ingredients
Filling:
3/4 to 1 cup sugar (1/2 white and 1/2 brown)
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon grated lemon rind
2 tablespoons flour
6 cups pared, sliced apples
1 tablespoon lemon juice
2 tablespoons butter (cut into pieces and added to pie before you add top layer)
2.6 cups sifted all-purpose flour
1 teaspoon salt
1 cup shortening
5-6 tablespoons cold water

- Mix filling ingredients and set aside while pastry is formed.
- Sift flour, add salt, cut in shortening, and add tbsps of water last.
- Work all ingredients. Cut in half. Roll out each half on floured board.
- For top layer, cut vertical lines in top crust to allow pie to breathe as it bakes.
- Bake 10 minutes at 450 deg F; reduce temperature to 375 deg and bake for 40-50 minutes
